Hi everyone! Happy Humpday! Well today flew by, so that it a whole better for me that the last two that seemed to be forever! I am having a bottomless pit day, I think it may have something to do with my nonexistent appetite the last two days due to stress.

When you are stressed does your appetite increase or decrease?

It is so different for everyone, for me it is that later.

I think my body finally said enough is enough and brought my appetite back in full force.

Around 10:30 I had a fruit leather, I really like this flavor. It is my favorite of all that I tried.

Lunch was the other half of my soup from last night.

and a side salad with spring mix, carrots, olives, peppers, tomatoes and cucumbers. It topped it with a little balsamic vinaigrette.

Think my soup container is a little big? HA! Soup was just as good the second time around πŸ™‚

Look at this little guy that I planted to keep on my desk.

It is going to be Black Eye Susans! I got it at Target for $1 this weekend, we will see how it works out. I hope they grow…brighten up my workday!

I was hungry again around 3pm, so I had this exciting snack:

This is my favorite bar right now! I know that is a BOLD statement, but it is true!

Look at that yumminess! I am thinking this will serve as some great fuel for my run today. I am itching to get out and run after all the stress I have been under. Honestly, since Sunday night (when the S**T hit the fan) I have not had time to squeeze in a run and I am ready to take my stress out on the pavement for sure!

I also had a decaf hazelnut coffee, with half and half and cinnamon. Gotta love free work coffee!

Well it is Wednesday so you know what that means:

  • Running today
  • Going to a Middle School Tomorrow to work with a Guidance Counselor
  • Petting Oscar when I get home (I miss him a lot today)
  • My engagement photo session a week from today
  • Wicked Bride’s Bachelorette Party this weekend
  • My Black Eye Susans

Writing down the things that I have to look forward to once a week has been really helpful! You guys know the drill, What are you excited about?

Good Morning! Well, Adam and I have decided to start a new morning ritual of getting up 3o minutes earlier to have coffee together and watch the news in the morning. It was Adam’s idea, he thought it would be nice to enjoy a few moments of peace together before the rat race starts. I agreed and this morning was the first time we did it.

I enjoyed some coffee with half and half and agave nectar per usual. It was surely a nice way to start off the day. We won’t be able to do it tomorrow as I will be going to a local Middle School to shadow a Guidance Counselor for my M.Ed program and will be getting u super early. But I think this is a new ritual I can get used to πŸ™‚

This morning, while figuring out what my eats would be, I saw this and knew exactly what I wanted.

Peanut Butter Jar Oats!

I have been having a hard time finding pumpkin in stores, but did buy some pumpkin pie mix to tie me over (the pumpkin pie mix already has the sugar and spices in it, so I can’t do as much with it).

I made the oatmeal as usual (1/2 of a banana, 1/2 a cup of oats, 1 cup of water), poured it in the jar, stirred in some pumpkin pie mix and topped it with chopped pecans!

I love the peanut butter jar oats because it ensures I don’t waste a drop of pb, and in some spoonfuls there are big chucks of peanut butter. Great brekkie all around!

Very Veggie Dinner

Hey everyone! Well, I hope your Tuesday was good. After work I met my friends Melissa and Jackie at Starbucks for a quick coffee before class. I had a grande skinny vanilla latte. No picture, sorry, you guys know what that looks like anyhow, right? It was good to just chat and catch up with them. Being around good friends right now is so helpful.

Class was good, I like this class it is pretty interesting. I have to say I do enjoy both of my classes this semester. After class I worked at my part-time job and got A LOT accomplished. Great feeling. Let’s hope I will feel the same way about my full-time job tomorrow.

Dinner tonight was awesome! I made some butternut squash and carrot soup. It was yummy and SUPER EASY!!!! The most complicated part of the whole thing is peeling the squash with your knife, no lie. Here is the step by step for you guys:

First you need to start off with a can of veggie broth, I use the Whole Foods 365 brand, but you can use whatever you like.

Open the can and pour it in a large pot. Next add some minced garlic (I use the kind in the jar) and a whole onion cut into pieces. Don’t worry about cutting the onion too small- this soup goes into the food processor at the end anyways.

Put it over high heat. Next, add one butternut squash peeled and cubed and 15 baby carrots (or about 5 whole carrots) cut up.

Cook over high heat, stirring, until the squash is soft. Once it is soft, add the mixture, in two small batches, into the food processor on the highest level for a few seconds.

Add salt and pepper to taste and serve!

It makes about 3 cups depending on the size of your squash.

In addition to about 1.5 cups of soup, I had a side salad with spring mix, tomatoes, peppers, cucumbers, and 1/2 a small grilled chicken breast (the other half is in Adam’s lunch for tomorrow) with some vinegar.

Dinner was so fantastic! This soup is out of this world, and it freezes well too. I think a double batch is in order soon so I can freeze some. My meal was almost entirely made of veggies!!! We know how this girl feels about her veggies, I was a happy lady!

Keeping it Simple.

Lunch today was pretty good. It had an oatmeal and flax tortilla (I really love these) with yellow mustard, laughing cow cheese, lettuce and mustard. It was simple and yummy, my appetite has been off, but I know I NEED to eat. During times like these, it is best (for me anyways) to keep it simple.

On the side I brought some cut up veggies (cucumbers, red, yellow and orange peppers and baby carrots).

I also had some Pop Chips.

They were good, but not GREAT like the other flavors I’ve tried. I think they are my least favorite, but they weren’t terrible by any means.

After lunch my co-worker Wendy and I went to do some free yoga that work was offering on Tuesdays during lunch. The class was super slow and not the kind of yoga I am used to. It was too slow for sure, the most difficult pose we did was tree pose. We both felt it was a little too slow. On the bright side, I was able to relax a lot and actually fell asleep during savasana. πŸ™‚ I think my body needed it. We are going to go back next week and see if it is better.

Around 3pm, I had a snack of fruit salad: grapes, raspberries, blueberries and cantaloupe.

I forgot how much I love raspberries. I bought them this week since all the strawberries looked yucky. I actually had to break the sad news to Adam that strawberry and watermelon season has come to an end. He was very sad. I too will miss these two fruits (although, I am sure you guys are ready to see some new stuff on here, huh?).

Well the rest of the day includes:

  • Class
  • Working at my part-time job, for some reason I feel like I have so much work to do there lately!
  • Dinner
  • Either Homework or relaxing with some TV (I think the later)
  • Making some Carrot and Butternut Squash Soup πŸ™‚

Hey everyone, sorry, I haven’t been posting lately. Yesterday was difficult and I had some things that could not wait, so after around 4pm, it was busy. Thank you all for your e-mails and sweet comments regarding what is going on with my family right now. It was great to get support from my readers. Thank you as well for not prying and respecting my privacy.Β  Today has been a little better, it is hard for me to continue one with my normal life like nothing is going on, but such is the plight of an adult. Life does not just stop so you can figure out how to deal with things.

Anyhow here are my eats and outfits. Around 11:30 am yesterday, I got a little snacky:

After a few snacks I laid down and slept for about 30 minutes, but my brain did not want to be sleeping. I got up and made the only thing I really wanted for lunch:

Green Monster:

  • Spinach
  • 1 banana
  • peanut butter
  • chocolate almond milk
  • bee pollen
  • flax seeds
  • ice

I didn’t really have an appetite, so this was perfect. After my Green Monster, I walked to class. After class I met with a classmate to work on aΒ  project and then worked at my part time job. By the time, that was done, it was late! I met Adam and my bestie May at the Warren Tavern for a late dinner.

I started off with a pumpkin head beer...have I menetioned that I love Fall Beer? πŸ˜‰

For my meal, I got the veggie burger.

It came with a LOT of cheese, next time I would order it with light cheese. I ate it open faced with just one side of the bun…too much bread. I didn’t really like the chipotle mayo it came withΒ  on the side. The burger itself has a little kick to which I loved.

It came with a side of fries, which I gladly did not substitute. They are my all time favorite fries ever!

I totally dropped the ball on the outfit picture, sorry. It wasn’t anything exciting at all, promise.

I did manage to shut my brain off and get 5 and a half hours of sleep last night, which is not great, but an improvement from the night before.

Breakfast was two Van’s flax waffles with honey almond butter, blueberry jam and 1/2 of a banana.

I am loving purple and suede for this season. I have been seeing purple everywhere this fall, in so many different shades! Love it!

Hi everyone! Well, it’s Monday, the weekend flew by, huh? I hope your Monday is going well. I am actually at home today. I did not go to work today because I did not sleep last night. I am dealing with some unexpected family things today that we just got wind of last night and I have to admit, it hit me pretty hard. I am going to keep it to myself, I am sure you guys understand, but if I am off or not my normal cheery self, please understand it is for good reason.

Ready for the eats? Breakfast was a whole wheat Arnold thin with an egg white, veggie sausage and cheddar cheese.
