Dinner At My In-Laws.

Hi everyone! I had a busy but productive day! I got a lot done at work and left feeling really accomplished.

Lunch was a giant salad that I ate while chatting with the bank and doing a few things for my part-time job.

It contained:

  • Herb Mix
  • Cucumbers
  • Red peper
  • Tomato
  • Black Olives
  • Artichoke Hearts
  • Feta
  • Tuna
  • Balsamic Vinaigrette

I also had an Adora disk- Gotta have my calcium πŸ˜‰

After worked, I walked to my Mother and Father-in-law’s house for dinner with the family. While walking I sipped a non-fat iced mocha. It was so delicious and calmed my sweet tooth and coffee craving.

When I got to my in-laws, I saw that my sister-in-laws had created a yummy Italian dinner. I had some pasta, raviolis, a piece of chicken parm and a slice of garlic bread.

It was great see all of the family, especially the kids. I haven’t seen them since my wedding. A few of the kids started school today, so I chatted with them about school this year. I can’t believe how big the kids are getting!!!! After dinner, I worked a little while at my part-time job and then did some things around my apartment.

I promised my co-workers I would make the Kath’s Kale Chips. I was talking out them one day and it peaked their interest. So I promised I would make them. I bought the kale this weekend, but never found the time to make them. So I made them while working on laundry and cutting up some fruits and veggies for the week.

They came out so good! I had to resist eating all of them. I did have 5 or so, I had to make sure they were good! I hope my co-workers like them πŸ™‚ I think they will.

Hello! How was the rest of your weekend? Mine was great! πŸ™‚

After blogging Saturday night, I worked on some laundry. Doesn’t it seem like I am always doing laundry?! I was craving a beer. I looked in the back of our fridge and found a blueberry beer! PERFECT! I drank it out of a beer mug and added fresh blueberries to it! I was so tasty πŸ™‚

After my beer and laundry. I was exhausted and went to bed early.Β  Such a wild Saturday night!

Yesterday morning Oscar woke me up at 8am for a walk. I quickly put on my running clothes and walked him while loading my Garmin. I had a banana asΒ  pre-run fuel.

I met up with my friend Steph and we hit the road. We ran 6 miles along the river. It was HARD!!!! I am not going to lie after mile 4 I struggled through the last two. It was getting warmer and my breathing was not great. We pushed through though. We felt accomplished, but exhausted by the end of it. I haven’t actually ran that distance in two months (can you believe that?) so I felt great!

Also, I am super thrilled to announce that my new running shoes are awesome! It feels like night and day and I am so glad that they worked out!

Breakfast was veggie bacon, scrambled egg whites, a piece of cranberry walnut toast with earth balance “butter”.

Yummm! Adam came home from his weekend away round noon time. He was at a bachelor party.Β  I hadn’t seen him since early Friday morning so I was excited for him to be home πŸ™‚

We decided to take a walk and stop for lunch at the Warren Tavern. I started off with a Shipyard Summer.

For lunch I got the Monument Chicken Salad. It was soooo good! It is mixed greens with tomatoes, artichoke hearts, new potatoes, green beans, red pepper, feta and grilled chicken.

I went to order another beer and I was told that the Shipyard Summer was kicked so it was time to switch to PUMPKIN!!!!!!! YES!!!!

Of course, I had to have the Pumpkin Beer!

I didn’t really feel much like cooking, so Adam ordered dinner from a local Italian place and I asked him to order me some of the soup of the day- which was veggie. It was so yummy! Sometimes, even on hot days, I really, really want soup!

I woke up this morning with SORE quads! I think the combo of Body Pump on Saturday and my 6 miler yesterday wore my quads out! Luckily, today is my rest day since I worked out for 6 days in a row. I am hoping that they will feel better by tomorrow.

After walking Oscar I whipped up a quick cappuccino.Β  πŸ™‚ I am seriously loving this new coffee maker!

Breakfast was eaten during my walk to work. I had a flax waffle sandwich with cinnamon raisin peanut butter.

and a really, really, juicy nectarine!

Busy Saturday!

Hey! I hope your weekend is going well. Mine is, but it has been busy.

Yesterday after work I met two of my friends Amy and Erica at American Craft for dinner and drinks. I haven’t actually seen Amy in over and year. I was so excited for a little girl date! American Craft was just a short train ride away from work and I relaxed on the train with my book until I arrived. Once I got there I was super impressed with the huge beer selection.

I settled on the wheat beer my friend Amy had ordered and told me was good. We have the same taste.

Amy was right, it was really good! I had two over the course of the night. We spent about 30 minutes girl talking and waiter kept coming over and we still hadn’t looked at the menu. I feel like we do that all the time, it must be so annoying for the waitstaff! Sorry 😦 We decided to order zucchini fritters while we looked over the list of entrees.

They came with a butter milk sauce for dipping. I had one, they were delicious! I decided to go with the veggie burger. I asked for avocado and feta as my toppings. I switched the fries for mixed greens.

The burger was great and was on a giant challah roll. I tried to eat it regular but it was too hard to bite, so after a few bites I lost the top and ate it open faced with a fork and knife. I cleaned my plate except for the bun top. The burger was really good and you could tell it was made fresh on site. There was definitely carrots and broccoli in it, I could taste them.

We chatted for a few hours about life, our marriages and work. It was great to catch up with them and laugh. At one point in the night Erica and I were laughing so hard we could not catch our breathe! By the time I got home at 10:30 I was pooped and headed right to bed.

I slept until 8 am this morning and it felt great. Once I got up I walked Oscar, changed into workout clothes and made a little breakfast. My mom and dad went to Herrietta’s Table for dinner last night and gave me some of the walnut and cranberry bread home. I was super excited to receive it when I picked OScar up last night. So for breakfast I toasted two small pieces of it and topped then with Earth Balance “butter” on the side I had two hard boiled egg whites and some grapes.

This bread was so good toasted…heaven! Once the breakfast dishes were done. I headed to 9 am Body Pump. I was so much less packed than last week, so that was good. It was a great workout πŸ™‚ After I finished my workout I was go, go, go! I walked a few blocks to the closest Starbucks and got a venti skinny vanilla iced coffee.

Right next door, was one of my favorite places on earth! Marathon Sports!

I popped in there to ask them about my blister and missing toenail issue. I told them my whole long story and they associates told me they were sure they could help me. They had me put on a neutral shoe and run up and down the street. It appears as if my overpronation had gotten worse since the last time I was fitted- especially in my right foot. Once they pointed it out to me, I could actually feel it in my right ankle. The associates Β also thought that I needed a shoe with a wider toebox than my current ones. So they brought me out 3 pairs of stability shoes with a wider toebox and I ran in all of them. I decided on the Brooks Adrenaline. The felt the best. I am excited to run in them tomorrow morning and take then for a spin. I am really hoping that these new shoes will solve my foot problems.

After buying my running shoes, I went to the grocery store and bought some produce and a few other things we are out of and would need for the week. Once I got home, I put away all the groceries and showered quickly because I had a noon time haircut. Told you I was busy! I didn’t do anything crazy with my hair, just a trim. I haven’t gotten my hair cut since December, so I really needed it! I am thinking of cutting it much shorter after my bestie May’s wedding. We will see πŸ™‚

After my haircut, I stopped at home for some lunch before getting the rest of my errands done. I made a prosciutto and fresh mozzarella sandwich with orange heirloom tomato, fresh basil, Trader Joe’s red pepper spread and fresh baked whole wheat sourdough. I also finished up the rest of the grapes.

I spent the afternoon shopping. We needed a few things for our apartment. Our bedding was 4 years old and falling apart. Adam actually threw away out comforter a last week and we have been using my parent’s old one until we found something we liked. I went out today bound and determined to find something. After going to a few different stores I finally found one!

I love it!!! I got the comforter, sheets, shams, skirt and throw pillows! Oscar is totally checking things out in this picture. He is weird about change. He will get used to it.

Other exciting buys, mini Larabars and a milk frother cup for our coffee maker πŸ™‚

While watching making the bed up, I snacked on a single serving of popchips that I got in the Healthy Living Summit swag bag.

For dinner, I wanted to use the left over noodles from Thursday night. I decided I wants to make a Thai peanut noodle bowl. To make the peanut sauce I added the following ingredients to a small sauce pan:

  • 2 tablespoons of soy sauce
  • 2 tablespoons of natural peanut butter
  • 1/4 of a cup of water
  • 1 clove of garlic minced
  • 1 tablespoon of brown sugar
  • juice from half of a lemon

I heated it over medium heat stirring constantly until it was all melted.

In the meantime, I stir fried 1/2 of a small zucchini and 1 small chicken breast cubed.

Once it was browned I added the noodles and the peanut sauce.

This was really good, but much richer than I thought it would be. I could only eat half of it and then tossed the rest (I actually gave Oscar a few noodles too. He loved them!).

Well, I have no real plans tonight, but I am hoping to do something. We will see. Have a great night and I will see you all tomorrow πŸ™‚

Hello! I am currently blogging to you on my lunch break from the graduate student lounge πŸ™‚ I think it is going to my new lunch spot πŸ™‚ It is a pretty cool spot with nice furniture and little nooks πŸ™‚

I like be a student at the same place that I work. It makes my life convenient:)Β  Lunch was leftovers from last night.

On the side I had some delicious fruit: grapes, mango and blueberries. πŸ™‚

It ws a great little lunch:

I ate while chatting with the bank about some financial details regarding the construction on our house! I feels so excited about getting the ball rolling πŸ™‚ It is a very exciting time for us right now. EEEEKKKKK!!!!

I was sent an interesting link from my friend’s brother about tieing your running shoes.Β  I think maybe this could be a solution to my problem? Four laces instead of two…Β  I am going think it over before buying new running shoes.

Well, I have to go back to work and finish up my day. I am meeting two girlfriends for dinner tonight to catch up on life. I am super excited to see them.

Another One?!

Morning! Well, hello there Friday! I am excited for it to be the weekend! I have no real plans in particular, but it is just nice to have some time to myself πŸ™‚

This morning before work I headed out for a Friday morning run with my friend Steph. The weather was great for a run. We both commented that we were actually chilly before we started running. What a switch from the humid sticky weather we were running in last week. It was great to catch up with Steph. We ran 3.79 miles in37:39. It was a great way to start my Friday πŸ™‚

Splits:

  • Mile 1- 9:55
  • Mile 2 – 9:57
  • Mile 3- 9:53
  • .79 miles – 7:52

While enjoying a breezy walk to work this morning I enjoyed a large iced coffee with a little half and half and vanilla syrup.

Breakfast was a giant Green Monster and a chocolate vitamuffin.

Green Monster:

  • 1 banana
  • 3/4 of a cup of fat free milk
  • 1 sh*tload of spinach
  • 1 scoop of Chocolate Green Superfood
  • 1 tablespoon of chocolate Vega
  • 2 tablespoons of flax seeds
  • 3/4 of a tablespoon of natural peanut butter
  • ice

It was thicker today than normal, not sure why, maybe because there was less milk? At any rate it was delicious!

Today’s Outfit:

In Other News:

Remember when my toenail fell off on Tuesday night? Well, guess what?! I think my right foot felt left out because when I got to work this morning, the same toe on my right foot shed a toenail!

I have been running in the same running shoes for over 2 years. However, this newest model has been giving me problems: blisters, bloody toes, discolored toenails and now missing toenails. I have given them the benefit of the doubt for about 4 months now and I think it is time to reevaluate what shoes are best for me. People have been telling me that maybe I need bigger runners- but these are a full size bigger than I wear in street shoes, which is what I normally buy in runners. I have been told I need to go wider, but these current shoes are actually some of the widest ones out there.Β  The strange thing is, there is not pain when these toenails are falling off. They don’t hurt when I run or anything. I am going to visit my good friends at Marathon Sports tomorrow morning after Body Pump to see what their thoughts are. They are always so knowledgeable and helpful.

New running shoes were not really in our budget right now as we have a lot going on financially and Adam is in desperate need of new running shoes too. But, after losing the second toenail in 2 days Adam and I both agreed that I need to take care of this sooner rather than later.

Oh well, let’s see what they say tomorrow. I will keep you posted!

Leftover Kabob Lo Mein

Hello! Can you believe tomorrow is Friday? Where the heck did this week go?! I don’t know… I am ready for the weekend for sure though πŸ™‚

The weather today on Boston was 100% better than it has been in the past few days which means I got to enjoy a lovely walk home from work πŸ™‚ Once I got home I downed a bunch of water and snacked on a s’mores z bar. Β I have never had this flavor before and I think it is my new favorite. I loved the little bits of marshmallow!

After my pre-run snack, I changed and was out the door. I had not run in a few days since we had monsoon-like weather so I was really excited to get running. The temp was great and the sun was shining. I actually had a fantastic run. I felt strong and enjoyed every step. I ran 3.86 miles in 36:28– I am getting faster!!!!!

My speed and my stamina are both coming back and it makes me happy πŸ™‚

I am VERY pleased with those splits πŸ™‚ I called Adam to tell him about my run and he said, “You are such a happy person when you have a good run!” He is right, I am. I good run can put me in an amazing mood and a bad one can ruin my day. Today is a good day.

After my run I started dinner. Since Adam is working over time I was on my own and wanted to use up the half of the ginger soy chicken kabob from Tuesday night. Nasoya sent me some coupons to try a few of their products. Β Since I have already tired and LOVE their tofu and nayo. I wanted to try the chinese style noodles I have had my eye on for a while. I bought them this weekend and decided I wanted to use them tonight. I cooked the noodles by following the directions on the package.

Meanwhile, I started stir-frying some spinach, 1/2 of a small zucchini (quartered) and 1/3 of a red bell pepper chopped.

Once those veggies were tender, I cut up and added the 1/2 of the kabob I had left over and a little soy sauce and stir-fry sauce.

Once the noodles were done, I drained then and added 1/2 of them to the stir fry pan and ran cold water over the others and put them in the fridge for another time. Let’s see if I can get creative with them too πŸ™‚

After the noodles were all mixed in I put it on a plate and called it dinner. It was a great use of leftovers πŸ™‚

I actually only ended up eating half of this plate since the meal was so filling. I saved the rest for lunch tomorrow. The noodles were really good. This reminded me a lot of lo mein, but fresher and much less greasy. I will be buying these noodles again. I think Adam would really like them too.

After dinner, Β I did the dishes and had tea and cookies. I made chamomile tea and had a small bag of Annie’s cookies. They were on sale at Whole Foods this week πŸ™‚ Probably geared towards kids for back to school, but whatever, I am a child πŸ™‚ I enjoyed then very much!

Grilled Pizza

Hello everyone! I actually took some time to myself last night and it felt great, so I didn’t blog, I just sat and relaxed.Β  It was bliss. Let me update you know.

Yesterday was another cold and rainy day in Boston and I had a very warm satisfying lunch before heading to my 1pm meeting.Β  I had one can of Amy’s split pea soup, a whole wheat and sunflower seed roll from the farmer’s market, some organic grapes and an Adora disk.

Nom, nom, nom!

I knew my meeting would be loooonnnnggg, so I thought a little macaroni and cheese notebook and a purple pen would make it breeze by. It is the little things in life πŸ™‚

After a busy day at work, I headed to Slow Flow Yoga. Before going into yoga, I made a few phone calls for my part time job and snacked on a mini larabar.

Yoga was AMAZING!!!! It stretched me out and really, really relaxed me. I made a very conscious effort to focus on my ujjayi breathe throughout the whole practice, and it really helped me out. I left feeling like a new woman after 75 minutes a beautiful yoga πŸ™‚ On the way home I stopped at Starbucks and got a tall skinny vanilla latte and enjoyed it on the train while I read my book.

Once I arrived hone Adam and I started dinner! It was pizza night for us!!! YIPPEE! I bought the Whole Foods whole wheat frozen dough this past weekend so we used that. You can find it in the freezer section. Before leaving for work, I put it in the fridge to defrost and when we got home it was soft and ready to go πŸ™‚ We love making pizza in the summer because we get to cook it on the grill.

How to make grilled pizza:

  1. Roll out the dough to desired size.
  2. Preheat the grill.
  3. Spray the pizza tray with cooking spray (* this is very important if you don’t spray it, your dough will stick to the pan and it will be a huge mess).
  4. Place the dough on the pizza tray and put it in on the grill for about 3-5 minutes until the dough bubbles a little.
  5. Once the dough is bubbling bring it back in the house and flip the dough.
  6. Add sauce, cheese and toppings to the browned side of the dough.
  7. Place back on the grill until the cheese is melted and you have reached your desired crispness.

Super easy!!! And look at this beauty!

Obviously my side is the one with all the veggies. I topped mine with fresh mozzarella, spinach, diced red peppers, diced orange heirloom tomato, black olives and diced artichoke hearts. The trick with the spinach is to layer it between the sauce and the cheese so that it gets the perfect amount of wilt. πŸ™‚ I had two slices and saved the other two for lunch today.

We make our own pizza very often so this is a bold statement. But- This one was the best one we have ever made. Adam agreed! I think it was the dough. Whole Foods dough is the best we have tried and we have tried many. Next step…I am going to try to make my own soon πŸ˜‰

I spent the rest of my night relaxing on the couch watching the First Wives Club. Such a cute movie! I went to see it in the movies with my mom and her bestie Eileen back when it came out. I love how they set out for revenge and end up doing something good after all. I am a sucker for that kind of stuff.

This morning I woke up excited to see the sun was shining for the first time in 4 days!!!! Oscar was excited to not get soaked during his morning walk too. Breakfast was a whole wheat bagel thin. For a topping I mixed a single serving container of low fat cottage cheese and some raspberry jam. I had a few mango slices and coffee with organic half and half on the side.

Lunch this morning was eaten quickly while working on multiple projects. I had two slices of left over pizza and some more mango. Gosh, I love mango!!!
