Very Exciting Step for Us!

Hello there! How are you? I have been pretty busy, let me update you! Yesterday after work I spent about 45 minutes in Starbucks doing some work for my part-time job. While I worked I drank a tall skinny vanilla latte.

and tried to avoid staring/puking at the couple making out in at the table in front of me. Um…there is not reason for that! What are your thoughts on PDA? I am fine with a little hug, peck or hand holding, no biggy. But, full on making out in Starbucks? It is a bit much.

At 6:30 I headed to Body Pump. It was amazing per usual! Although I was positioned directly in front of a mirror and got an up-close view of the ridiculous faces I make when my muscles fatigue- very attractive!

After Body Pump, I went to my part time job and worked for a little while and then went home to make dinner. Dinner didn’t happen until about 8:30 pm and I was starving! I made two huge salads one for dinner and one for lunch today. Sometimes when I am making dinner, I will prep my lunch for the next day too. It makes my morning so much easier.

The salad contained:

  • Arugula (my new obsession)
  • Tomatoes
  • Carrots
  • Cucumbers
  • Red Bell Peppers
  • Feta
  • Hummus
  • A veggie burger
  • Black pepper
  • Olive Oil
  • Balsamic Vinegar

It looks like a whole big mess, but it tasted great! Arugula is great as a salad base because it has so much flavor!!!

For dessert I have two leftover pumpkin dark chocolate chip cookies. These are so good! But, I think they will be the last of the season 😦 Time to move onto Christmas cookies and put away the fall cookies.

I spent the rest of the night reading. I started a new book! So far, I am loving it!

I know a lot of people love Jodi Picoult books, this is actually my first one. I have a feeling a new addiction has begun!!!

I woke up this morning with one thing on my mind, OATMEAL! I made hemp oatmeal with 1/2 of a banana, cinnamon and peanut butter with a cup of coffee.

I opened a new jar of peanut butter and was annoyed that all of the oil had floated to the top 😦 Until I remembered the peanut butter stirrer I had! I used to use this guy all the time! But since I have been buying barney butter more often (that doesn’t need to be stirred) I forgot about it. This thing was super cheap and is a huge lifesaver!

Teddie peanut butter is made about 3 miles from where I live, by the way!

Lunch, like I said, was a repeat of dinner last night.

Today at work we decorated a little bit for the Holidays! I hung my stocking at my desk:

and I put up my desk tree πŸ™‚

My coworkers and I worked on some snowflakes to decorate the door. It was a nice change from work! Here are some of my masterpieces!

****** Adam and I are meeting with the architect about our house for the first time tonight. He is going to look at the house and get our ideas about what we want and then draw us up some plans!!! This is a very exciting step for us! *******

I am so freakin’ excited!!!!!Β  I need to get on cleaning it out, luckily my mom is helping me with it. We have started to make a schedule of what to clean and when. I am hoping to get it cleaned out by Christmas or the first of the year!

I woke up this morning thinking how fast my little four day break flew by! They always do, don’t they?! I did feel like I was ready to go back to work though. I am a huge routine person and sometimes being out of my routine throws me off. Are you a routine person?

Breakfast this morning was a container of vanilla Greek yogurt, 1 cup of Kashi GoLean Crunch and some slices strawberries with coffee.

Lunch was a serving of turkey soup made my FFF mom! She used our leftover Thanksgiving turkey πŸ™‚ I love that she used whole wheat pasta in it too.

I have a feeling you will be seeing a lot of this soup πŸ™‚ It is so good!

The Proof Is In The Pudding!

Saturday morning Adam and I got up and got ready to head to his parent’s house. His sister and nephew were here for the week visiting and were heading home that afternoon and we wanted to spend a little more time with them before they left.

We split a whole wheat bagel with cream cheese and I had coffee that is unpictured- sorry!

It was great hanging out with my in-laws, but it was sad to say goodbye to Deb and Anthony. We are hoping to get down to Florida to visit them in February. I really hope we are able to.

I am not going to lie- ALL of Saturday was spent on the couch. Adam and I took out DVR from 97% full to have about and hour left of TV on it. It was one of the best afternoons I had in a while. I sitting on the couch being lazy and catching up with TV πŸ™‚ We had more of a “linner” than lunch or dinner. We ordered take out. I got gnocchi and when asked if I wanted soup or salad I went for the soup, it was chicken veggie πŸ™‚

The gnocchi was awesome, it had big chunks of tomatoes in it which made it that much more delicious. I barely even made a dent in it after the soup though. We went to bed around 11pm, so proud of all the “work” we had done clearing out the DVR πŸ™‚

Yesterday morning I got up nice and early and cleaned up apartment. It wasn’t super messy, but with the Holiday and all it could use some extra cleaning- especially the kitchen. Around 11 am I made myself brunch. I had an egg white, cheddar and veggie bacon sandwich on whole wheat bread with grapes and strawberries.

I also had a cup of coffee. After brunch I started on my paper. I spent about 5 hours bouncing back and forth between reading journal articles on the effects of media on the body image of girls and doing the 9 loads of laundry I completed yesterday! Even though I spent most of the time sitting on the couch, I was uber productive!

Once I finished all my reading, I had zero energy to then turn my research into a paper. So I took about an hour to have dinner and hang out with Adam and Oscar.

Dinner was leftovers from Saturday’s “linner”Β  some of my gnocchi and Adam’s ziti. Adam and I each had a plate and there is STILL leftovers! I can’t believe it!

It is not pretty all mashed up, but it was yummy.

At around 7pm I sat down with a cup of Bombay Chai and fourced myself to write my paper. (CHRISTMAS MUGS ARE OUT! )

It is not due until Wednesday, but I knew that once the week got underway I would not have as much time to get it done! I worked for about 3 and a half hours and finished it around 10:30 pm. I am NOT going to miss school when I am (hopefully) done for good next year, but I do think I will miss that high I get after crossing a paper off my list of to-do’s.

I stayed focused yesterday and got to big to-do’s crossed off:

  1. Get paper done- Check!
  2. Do the insane amount of laundry in our house- Check!

Just an FYI- I am always saying that Adam produces a ridiculous amount of laundry- and he wears a uniform to work everyday…HELLO! He always disagrees with me. Well, darling husband, the proof is in the pudding!

Put On Your Game Face!

Friday morning FFF Dad and I got up before dawn and put on our game faces…

and we hit the stores. The very first stop was Starbucks where I got a nonfat gingerbread latte, dad went to Dunkin Donuts and got himself a coffee.

Once we were caffeinated we, braved the crowds and shopped for about 5 hours. Around 10:30 am, for fear that I was hangry and may end up getting violent, my dad suggested we go to Sound Bites for breakfast to regroup and refuel. I agreed that it was a good idea!

I started off with pumpkin coffee.

For breakfast I got a portballo, goat cheese and tomato egg white omelet with whole wheat toast and a side of turkey bacon.

This omelet was huge and I only ate about half, all my bacon and one piece of toast. Once we finished breakfast we were back at it. We shopped for a few more hours and got a lot done. Once we were worn out for the day we hid the gifts (which were mostly for FF mom) in our top secret hiding place and went on home.

I was so exhausted I took Oscar for a small walk, just so he could use the bathroom and then took a 3 hours nap! I haven’t had a nap in so long….it was glorious.

When I woke up, I got a text from my friend Melissa asking me if I wanted to go out to dinner with her. I showered and got ready to head out. We ended up going to Oye in Reading. She had been there earlier this month and LOVED IT! I was excited to go. I started off with an Orange Dragon.

It was made with orange juice and mandarin orange vodka.Β  I usually got for red wine or a beer, but sometimes a girl just need a fancy drink. πŸ˜‰

We split an appetizer ofΒ  scallion pancakes.I had two triangles, they were awesome.

For my meal I for the stir fried tofu and veggies with a side of steamed brown rice.

It was really good, the tofu was soft on the inside and a little crunchy on the outside. The baby corn and bamboo shoots made it really tasty. I very rarely eat either of those two veggies.

After dinner we noticed that the parking lot of the near by Market Basket was pretty much empty. So we decided to go in a take advantage ofΒ  post-holiday sales. There were about three people in the whole store and Melissa and I were two of them! I ended up buying 4 Cornish Hens0 my new favorite!

After grocery shopping, we all met with my friend Jill and her husband Ryan for a few beers at the Warren Tavern.

It was a great day of good deals, family and friends! πŸ™‚

I have been missing for a few days and I wanted to fill you all in on what has been going on. We got home pretty late on Thanksgiving and and Friday and Saturday I spent disconnected from the internet (I really need that every once and a while) and yesterday I worked the whole day on my paper and presentation for class this week. I had a great weekend, so let me update you πŸ™‚

Oh- and since I didn’t get through all the giveaways that I had planned last week, I will be continuing them this week πŸ™‚ Get excited!

On Thanksgiving after my last post, I watched the TWO episodes of Oprah’s Favorite Things. My mom and I are pretty much obsessed with her favorite things and I cannot believe that she had two shows this year. Confession: I secretly get jealous of everyone that is in the audience for that show. The whole time I get mad that I was not there, just being honest!

While watching Oprah, I had dessert (the first of many that night πŸ™‚ ). I had a small slice of my mom’s pumpkin pie. It was really good. I love pumpkin pie, and really only eat it on Thanksgiving so when I eat it I always feels really special.

Around 6 pm I headed over to my sister-in-law’s house to spend some time with the in-laws. While there I had my second round of desserts, chocolate cake and peanut butter pie. My sister-in-law CJ makes the best peanut butter pie and I am pretty much obsessed with it.

I also had some celery topped with olive cream cheese. My mother-in-law makes this cream cheese and I love it. I only get it around the Holidays and she always makes sure to save some for me πŸ™‚

It was great to catch up with everyone, we also picked names for out Holiday grab πŸ™‚ I love buying my grab gift. We talked Black Friday strategy as well.Β  You think my husband’s side of the family is a little obsessed with the Black Friday Deals? πŸ˜‰

Later on in the evening, we decided to use the leftover turkey to make turkey soup. It was a family affair, everyone chipped it.

Too many cooks in the kitchen?!

I ended up not getting home until 11pm and headed right to bed. I had to get up at 5:30 am for some Black Friday shopping with FFF Dad.

Thanksgiving Feast!

Hello! I hope you are having a great Thanksgiving! I know I am! I am STUFFED!!!! πŸ™‚ This morning after making my cookies, I stated the other two things I was responsible for stuffing and roasted brussle sprouts. I was a little worried about the stuffing because I have never made it before and it is my favorite, so if it was crappy, I would be sad and with no one to blame by myself.

I started off by adding one sweet onion chopped and 8 ribs of celery to a large frying pan with 8 oz of Earth Balance “butter” plus a tablespoon each of rosemary, thyme and parsley.

I sauteed the veggies until the onions were translucent. Meanwhile I toasted a loaf of bread in the oven for about 15 minutes at 350 degrees. I used this bread that I brought home from the Foodbuzz Festival. It got squished in transit so it is was hard to use for anything. But was perfect for stuffing. No waste πŸ™‚

Once it is lightly toasted I took it out of the oven and cut the bread into about 1/3 of an inch squares. I did this by cutting it length wise and then with wise.

Once they were all cut up I added them to the pan and then added about 2 cups of chicken stock. I started off with 1 cup and then kept adding more until it got mushy enough, but not too mushy. I would say I added about cup (two total).

Once everything was mixed in and soft, I chopped and added these chestnuts that were sent to me a while ago and have been sitting in my cabinet for a while.

Finishing product:

It was OUTSTANDING!!!! I was soooooo proud of my stuffing. It was a huge hit!

For the brussle sprouts I halved about 20 ounces of fresh brussle sprouts and tossed them with olive oil, juice of 1/2 of a fresh lemon, garlic powder, black pepper and vegan parmesan cheese.

Roasted them for 25 minutes at 450 and they came out so delicious, brown and crunchy.

My mom made the turkey, gravy, mashed potatoes and squash. Once everything was ready, my brother helped me battle the trouble maker of Thanksgiving as we tried to set the table.

The trouble maker is our fur brother Jeff. He tries to trip you so you will drop food when you are carrying from the kitchen to the dining room. He also tries to steal things from the table. He is fast moving- but Nick and I managed to get the table set without any disasters. Last year, in case you forgot, Jeff stole the turkey.

Dinner was great, the turkey was amazing and all the sides were awesome. I took so many photos of my food I almost forgot I needed to eat it!

After dinner, I tried out my mini tripod to see if we could get a family photo. It worked!!!! I am glad we were able to get one πŸ™‚

Oh- you may have noticed I am missing about 7 inches of hair πŸ™‚ Do you like it? I am loving it!!!!!

Happy Thanksgiving, blog land!!!!! I love this Holiday πŸ™‚ A lot of the reason is because I am obviously a big foodie, but most of the reason is because I have so much to be thankful for in my life. I have had some hard times, but I am truly, truly blessed and this Holiday reminds me to be grateful for that. We all need a little reminder every now and them, right?!

Yesterday I had a lunch date with Adam after I got out of work at 1pm. He picked me up from work and we headed to the 99 for lunch. It was a nice little date, Adam and I haven’t been out alone in at least a month to 6 week. It was great to catch up, although at one point I got up to go to the bathroom and when I came back he was reading my blog on his iPhone and was so interested he never looked up to notice I was back. He was laughing and agreeing with a lot of your comments. Ha!

I started off with a much needed draft week, I had had a loooong week and also planned on going to the grocery store to pick up some stuff for today. We all know that a drink is required before going into the grocery store the day before Thanksgiving!!!

I love that the 99 always does frosted mugs. I was excited to see they they are offering healthier options on their menu. I really hope that other restaurants so this as well.

For lunch I started with a bistro salad with balsamic dressing.

For my meal, I got the herb grilled salmon with veggies. It came with broccoli, grilled tomatoes and grilled asparagus. It was really good and just the right amount of food. I was pretty psyched about grilled veggies, we have them all the time in the summer, but once the grill gets put away for the winter the grilled veggies stop happening. Oh how I have missed them!

After lunch I braved it at the grocery store. It was not a pleasant experience. First, someone stole m y parking spot! Then I thought my luck had turned around when I went into the store and got the last shopping cart. Um, it was sitting there because the wheel was broken. So, as you can imagine, that was a blast. But I got what I needed and got the heck out of there.

After my grocery store frenzy, I went and got a manicure πŸ™‚ It has been so long since I had one. I think the last one I got was in July. I have been just doing my own nails. I loved the color I picked, it is like an Ox Blood color!!!

After the mani, I sprinted down the street to my hair appointment. And….I DID IT!!!! I BOBBED! I cut off about 7 inches- and I love it! It is so sassy and cute at the same time!! My hairdresser said it was enough to donate! It looks a hot mess right now after being slept on, but I promise you will get pictures today at some point! πŸ™‚

My bestie May met me at the salon and we booked it once I was done. We were running late! We were meeting out guidance counselor from High School out for a few beers before she went to the Celtics game. We are still in touch with her, she was such an amazing counselor and probably a big reason I am in school to be one πŸ™‚

Once Ms. Carlson (hehehe, I still can’t call her by her real name) left for her game May and I went to meet friends at the Warren Tavern for dinner and drinks. I had about 3 bud lights over the course of the night. For an appetizer May and I got the bruschetta. I love this bruschetta so much because it is made with goat cheese.

For my meal I got the crab cake BLT minus the bacon. I was given the choice of fries or chips and I chose the later. They makes the chips right there in the restaurant and they are really great.

I have never had a crab cake in a sandwich and it was really good. It was also topped with a little spicy sauce. It was super filling though, I only had half of it.

I hung out for about an hour with friends but was just not feeling staying out drinking all night. So after a total of three beers I went home and went to bed, it was around 10:15pm.

This morning was a little hectic, I got up and while I went to my mom’s to borrow a larger pan for my stuffing Adam made breakfast for us. I had a small egg white omelet with tomato and feta cheese.

I also had coffee with half and half.

Look what I found at my mom’s house πŸ™‚

Sure it looks like a normal newspaper article (by the way that is FFF Dad all the way on the right hand side).

I made pumpkin dip for the event mentioned and my name and my blog URL is is the newspaper!!!! I know it may seem weird, but I get really excited when I see my blog in print!
